35th Birthday!

So, yeah. I'm 35 years old. WHO is responsible for this?! Whatev.  -_____-
But you know me, any excuse to celebrate!

My actual birthday fell on a Wednesday so I took the day off, (as per my usual because ain't nobody got time to work on their birthday!), my husband and I just kinda spent the day hanging out, went for coffee, did some shopping (got some awesome goodies!) and then went to dinner at Grillfire on Long Island. Why is it ON Long Island and IN Manhattan....?
Both are surrounded by water, no?? I digress.
The food was awesome - just great American comfort food with a modern twist. If you're in the neighborhood, you must check it out! Free cotton candy at the end of your meal too! That's a winner in my book!

I went back to my mom's house for cake with my family. She knows her daughter well - streamers and Hello Kitty birthday plates. I will NEVER grow up - 35 or not!

Saturday night, I went to a relatively quiet dinner with my usual suspects at a really good Asian Fusion restaurant  named Xaga  - also ON Long Island. :)
While it was just a dinner, I guess because it was "35", I wanted to make it feel partyish and festive. I got personalized paper placemats from Paper Source and mini gold boxes and personalized tags from Beau Coup. Since it was a pink and gold theme, I put gold candy in the boxes. I added candy buttons on the table for fun! It came out really nice.

I want to thank my friends and family for a great birthday. I am blessed with all the things money can't buy. And since not everything in life is free.... what shall I buy with all of those birthday gift cards...... *rubbing my greedy little hands together*......

Happy Birthday to me and a very happy birthday to all of my fellow Pisces!!

XO

Winter Dress

After not really "dressing" for a couple months due to this miserable Winter and my lack of motivation, I finally had a reason to brush my hair and put something nice on!

My friend Lauren had a beautiful baby shower a couple of weeks ago and I chose this paisley-like printed dress from Macy's because it was nice enough for the event, it had long sleeves for the cold weather but didn't make me feel like I wasn't dressed up.

I paired it with neutral booties (no stockings - I was crazy, but it's all for fashion, right?!) and a long simple necklace so it didn't compete with the print but added a little something to it.

I am SO looking forward to Winter being over and finding my fashion happiness once again!
Lots of fun Spring outfits coming - y'all know at this time of year,  I just can't. lol

Anytime Omelette

A couple of weeks ago, my husband and I went to a diner for breakfast. I saw what was called a Greek omelette. Spinach, cherry tomato, grilled chicken and feta cheese. Grilled chicken in an omelette you say??

I was side swiped. I don't know why such a simple thing shocked and delighted me so much. I have to imagine this is nothing new at all. Bodybuilders and low carb eaters no doubt have been adding chicken to their omelettes for years. It just never occurred to me
Sure, I have breakfast for dinner all the time but I never thought to bring dinner to breakfast!

Genius.

This is such a simple and versatile meal. It serves many purposes for me. Sometimes I need to kick up my protein intake, sometimes I want something hearty and warm for breakfast instead of cheerios or oatmeal, sometimes when I don't feel like making a big to do for dinner, I can just whip this up. It's super simple, its healthy, its cheap, its delicious and its quick.

Sauteed spinach and garlic in Pam non stick spray - you can use olive oil if you want.

Add in your chicken

and your eggs!

There you have an anytime omelette! I made this last night for my lunch today.

Obviously, this blog is not about the fact that I invented grilled chicken in an omelette.
But it is a friendly reminder that it can be done. So I did it.
And if you, like me,  never thought to do it and it sounds like something you're excited to eat, you should do it too!

Happy eating!
