A couple of weeks ago, my husband and I went to a diner for breakfast. I saw what was called a Greek omelette. Spinach, cherry tomato, grilled chicken and feta cheese. Grilled chicken in an omelette you say??
I was side swiped. I don't know why such a simple thing shocked and delighted me so much. I have to imagine this is nothing new at all. Bodybuilders and low carb eaters no doubt have been adding chicken to their omelettes for years. It just never occurred to me.
Sure, I have breakfast for dinner all the time but I never thought to bring dinner to breakfast!
Genius.
This is such a simple and versatile meal. It serves many purposes for me. Sometimes I need to kick up my protein intake, sometimes I want something hearty and warm for breakfast instead of cheerios or oatmeal, sometimes when I don't feel like making a big to do for dinner, I can just whip this up. It's super simple, its healthy, its cheap, its delicious and its quick.
Add in your chicken
and your eggs!
There you have an anytime omelette! I made this last night for my lunch today.
Obviously, this blog is not about the fact that I invented grilled chicken in an omelette.
But it is a friendly reminder that it can be done. So I did it.
